Health & Wellness: Eating Chocolate Cake is NOT Cheating!!!!

I have been back to WHOLE30 and Paleo Living for the last 3 weeks (I launched wayyyyy back in May, but fell off the bandwagon. shhhh . . . ).  I feel tons better already, and Mr. Mac is doing it too.  However; all lifestyle changes come with a sacrifice and with a price.  The hardest one for this mom to handle has to do with the elimination of a certain sweet confection, discovered by the Spanish used by the ancient Mayans and Aztecs, and highly addictive to the general female population at large . . . CHOCOLATE!

Solution?  Good friends + same ideals = Yummy chocolate cake, guilt free! 
Thanks to our good friends Victoria G. & Mark M. for putting their heads together (hope it didn't hurt too bad) and coming up with the most magnificent Chocolate Cake in a Cup, that is the answer to every whole-paleo foodie's dreams! 

P.S. This cake is Grain-free, Gluten-free, Sugar-free, Dairy-free & Soy-free!

INGREDIENTS:

5 Tablespoons Almond Meal/Flour
6 drops of Stevia (or 1 1/2 tsp. powdered stevia)
2 Tablespoons Cocoa powder (or less if you want it not so dark-chocolaty, but who want's that?)
1 Egg
4 Tablespoons Almond or Coconut Milk
1 1/2 Tablespoons of Apple Sauce
3 Tablespoons Coconut Oil
Splash of Vanilla
(Organic coconut flakes *optional*)

1.  Mix dry ingredients into microwavable coffee mug.
2.  Add egg into mug and mix thoroughly.
3.  Next, add "milk", applesauce and oil and mix together well.
4.  Invite the child of one of this recipe's inventors over to make the cake and sample it, alongside your family.  (Okay, that is probably just me!)


5.  Add splash of vanilla and mix well.  Be certain all of almond meal is mixed from the bottom.  The girls did not stir their cake well the first time around.  You can sprinkle desired amount of coconut flakes on top.
6.  Cook in the microwave oven for 3 minutes - 3 minutes 20 seconds in a 1000 watt microwave.

Dump the cake onto a plate and garnish as desired.  We added Coconut Milk Vanilla Yogurt, Sliced Strawberries and more Coconut (big fan here) to ours.
